Condiciones ideales de cultivo
A 425 metros de altura en la ladera oeste de Paso Robles, nuestro viñedo de 4,8 hectáreas prospera en suelos magros y calcáreos, ideales para fruta de baja producción y alta calidad. Cultivamos en secano y seguimos prácticas sostenibles.
Además de las variedades de Burdeos, recientemente hemos plantado Pinot Noir en la cima de una colina cerca de la casa familiar, aprovechando los diversos microclimas del lugar.
La producción anual está limitada a 2.600-3.000 cajas, elaboradas mediante métodos tradicionales: fermentación en lotes pequeños, bazuqueos manuales y crianza en barrica.
Desde que obtuvimos nuestra primera medalla de oro en 1996, nuestros vinos continúan ganando reconocimiento por su elegancia y profundidad.
Haciendo realidad el sueño
La pasión de Bob Dunning por el vino comenzó mientras viajaba por las regiones vinícolas de California. Tras adquirir la propiedad de Paso Robles en la década de 1980, la familia lanzó su primera cosecha en 1991.
Bob comenzó a abastecerse de Chardonnay de James Berry en 1986 y finalmente plantó su propio viñedo utilizando los esquejes de Berry.
El objetivo era claro: elaborar vinos cultivados y embotellados en la finca.
Con el tiempo, el viñedo se expandió para incluir Cabernet Sauvignon y Merlot, además de Zinfandel y mezclas de estilo Ródano agregadas a partir de frutas de fuentes seleccionadas.
El arte de hacer vino
VINOS DE PEQUEÑA LOTE CON ARRASADA EN LA TRADICIÓN
En Dunning Estate, la vinificación es un arte intencional y práctico. Cada lote se fermenta por separado en pequeños recipientes abiertos, lo que permite una atención minuciosa al detalle en cada etapa. Los vinos tintos se bazuquean suavemente a mano para realzar la estructura y preservar los delicados aromas, capturando la esencia de la fruta sin trabajarla excesivamente.
Los vinos blancos se fermentan en barricas de roble francés para desarrollar texturas complejas y una sutil complejidad. Adoptamos un enfoque minimalista, utilizando levaduras autóctonas siempre que sea posible y guiando cuidadosamente cada fermentación a temperaturas bajas para preservar su carácter y equilibrio.
La crianza se realiza en barricas de roble francés cuidadosamente seleccionadas, con una cuidadosa combinación de madera nueva y neutra para realzar la profundidad natural del vino. Cada paso, desde la fermentación hasta el ensamblaje, se guía por la experiencia y el tacto, dando lugar a vinos concentrados, elegantes e inconfundiblemente Dunning.
Una auténtica bodega familiar
En Dunning Estate, la familia no solo está entre bastidores, sino que es el centro de todo lo que hacemos. Bob y Jo-Ann Dunning suelen estar en la sala de catas, sirviendo vinos y dando la bienvenida a los invitados.
Su hijo Garrett gestiona el club de vinos y está profundizando en el negocio familiar. También encontrará a familiares y amigos participando en eventos o ayudando en la sala de catas.

Grenache is one of the most widely planted grapes in the world. It ripens late, so it needs hot, dry conditions such as those found in Spain, where the grape originated. Here in Paso Robles we have a slightly cooler climate. So it is usually one of the last varietals to be harvested, but it‘s certainly worth the wait!Button
