Conditions de croissance idéales
Situé à 420 mètres d'altitude, à l'ouest de Paso Robles, notre vignoble de 5 hectares à flanc de coteau prospère sur des sols maigres et calcaires, parfaits pour des fruits de grande qualité à faible rendement. Nous pratiquons la culture sèche et appliquons des pratiques durables.
En plus des cépages bordelais, nous avons récemment planté du Pinot Noir sur une colline près de la maison familiale, profitant des divers microclimats du site.
La production annuelle est limitée à 2 600 à 3 000 caisses, élaborées selon des méthodes traditionnelles : fermentation en petits lots, pigeages manuels et vieillissement en fûts.
Depuis que nous avons remporté notre première médaille d’or en 1996, nos vins continuent de gagner en reconnaissance pour leur élégance et leur profondeur.
Réaliser le rêve
La passion de Bob Dunning pour le vin est née lors de ses voyages dans les régions viticoles de Californie. Après avoir acquis la propriété de Paso Robles dans les années 1980, la famille a lancé son premier millésime en 1991.
Bob a commencé par s'approvisionner en Chardonnay auprès de James Berry en 1986, pour finalement planter son propre vignoble en utilisant les boutures de Berry.
L’objectif était clair : élaborer des vins cultivés et mis en bouteille sur place.
Au fil du temps, le vignoble s'est agrandi pour inclure du Cabernet Sauvignon et du Merlot, avec des assemblages de Zinfandel et de style Rhône ajoutés à partir de fruits sélectionnés.
L'art de la vinification
UNE VINIFICATION EN PETITES LOCALISATIONS ANCRÉ DANS LA TRADITION
Au Domaine Dunning, la vinification est un travail artisanal et intentionnel. Chaque lot est fermenté séparément dans de petites cuves ouvertes, ce qui permet une attention particulière aux détails à chaque étape. Les vins rouges sont délicatement pigés à la main pour améliorer la structure et préserver la délicatesse des arômes, capturant ainsi l'essence du fruit sans le surmener.
Les vins blancs sont fermentés en fûts de chêne français pour développer des textures étagées et une subtile complexité. Nous adoptons une approche minimaliste, utilisant des levures indigènes lorsque cela est possible et guidant soigneusement chaque fermentation à basse température afin de préserver caractère et équilibre.
L'élevage s'effectue en fûts de chêne français soigneusement sélectionnés, avec un savant mélange de bois neuf et neutre pour préserver la profondeur naturelle du vin. De la fermentation à l'assemblage, chaque étape est guidée par l'expérience et le ressenti, produisant des vins précis, élégants et indéniablement Dunning.
Un véritable domaine viticole familial
Chez Dunning Estate, la famille n'est pas seulement présente en coulisses, elle est au cœur de tout ce que nous faisons. Bob et Jo-Ann Dunning sont souvent présents dans la salle de dégustation, servant les vins et accueillant les invités.
Leur fils Garrett gère le club de vin et s'investit activement dans l'entreprise familiale. Vous trouverez également des membres de la famille élargie qui participent aux événements ou aident à la dégustation.
