理想的な栽培条件
パソ・ロブレスの西側、標高1,400フィート(約420メートル)の丘陵地帯に広がる12エーカー(約4万平方メートル)のブドウ園は、痩せた石灰質の土壌で健やかに育ち、収量が少なく高品質な果実の生産に最適です。私たちは乾燥農法を採用し、持続可能な農法を実践しています。
私たちは最近、ボルドー品種に加えて、その土地の多様な微気候を利用して、家族の家の近くの丘の上にピノ・ノワールを植えました。
年間生産量は2,600~3,000ケースに限定されており、少量発酵、手作業によるパンチダウン、樽熟成といった伝統的な製法で造られています。
1996 年に初めて金メダルを獲得して以来、当社のワインはその優雅さと深みで高い評価を得続けています。
夢の実現
ボブ・ダニングのワインへの情熱は、カリフォルニアのワイン産地を旅していた時に始まりました。1980年代にパソロブレスの土地を取得した後、一家は1991年に最初のヴィンテージワインを発売しました。
ボブは1986年にジェームズ・ベリーからシャルドネを調達することから始め、最終的にはベリーの挿し木を使って自分のブドウ園を植えました。
目標は明確でした。自社農園で栽培し、自社で瓶詰めしたワインを造ることです。
時が経つにつれ、ブドウ園はカベルネ・ソーヴィニヨンやメルローを栽培するようになり、厳選された果物から作られたジンファンデルやローヌ風のブレンドも加わりました。
ワイン造りの芸術
伝統に根ざした少量生産のワイン造り
ダニング・エステートでは、ワイン造りは意図的で手作業による職人技です。ロットごとに小さな開放型容器で個別に発酵させることで、あらゆる段階で細部にまで気を配ることができます。赤ワインは、手作業で優しくパンチダウンすることで、骨格を強化し、繊細なアロマを保ち、果実のエッセンスを余すことなく捉えています。
白ワインはフレンチオーク樽で発酵させ、重層的なテクスチャーと繊細な複雑さを生み出します。私たちはミニマリスト的なアプローチを採用し、可能な限り天然酵母を使用し、各発酵を低温で慎重に制御することで、ワインの個性とバランスを保ちます。
熟成は厳選されたフレンチオーク樽で行われ、新樽とニュートラルオークを巧みに組み合わせることで、ワイン本来の深みを引き立てます。発酵からブレンドまで、すべての工程を経験と感覚に基づいて行い、凝縮感がありエレガント、そして紛れもなくダニングならではのワインを生み出しています。

ダニング・エステートでは、家族は単なる舞台裏の活動ではなく、私たちのあらゆる活動の中心にあります。ボブとジョーアン・ダニングは、テイスティングルームでワインを注ぎ、お客様をお迎えすることがよくあります。
息子のギャレットはワインクラブを運営し、家業に深く関わっています。また、イベントやテイスティングルームで手伝いをする親戚の姿も見かけます。

Grenache is one of the most widely planted grapes in the world. It ripens late, so it needs hot, dry conditions such as those found in Spain, where the grape originated. Here in Paso Robles we have a slightly cooler climate. So it is usually one of the last varietals to be harvested, but it‘s certainly worth the wait!Button
