Condizioni di crescita ideali
A 430 metri sul versante occidentale di Paso Robles, il nostro vigneto collinare di 5 ettari prospera su terreni magri e calcarei, perfetti per uve a bassa resa e di alta qualità. Coltiviamo in dry farming e seguiamo pratiche sostenibili.
Oltre alle varietà bordolesi, di recente abbiamo piantato del Pinot Nero su una collina vicino alla casa di famiglia, sfruttando i diversi microclimi del sito.
La produzione annuale è limitata a 2.600-3.000 casse, realizzate utilizzando metodi tradizionali: fermentazione in piccoli lotti, follature manuali e invecchiamento in botte.
Da quando abbiamo vinto la nostra prima medaglia d'oro nel 1996, i nostri vini continuano a ottenere riconoscimenti per la loro eleganza e profondità.
Realizzare il sogno
La passione di Bob Dunning per il vino è nata durante i suoi viaggi nelle regioni vinicole della California. Dopo aver acquisito la proprietà di Paso Robles negli anni '80, la famiglia ha lanciato la sua prima annata nel 1991.
Nel 1986, Bob iniziò a procurarsi dello Chardonnay da James Berry e alla fine piantò il proprio vigneto utilizzando le talee di Berry.
L'obiettivo era chiaro: creare vini coltivati e imbottigliati nella tenuta.
Nel corso del tempo, il vigneto si è ampliato fino a includere Cabernet Sauvignon e Merlot, a cui si sono aggiunti vini in stile Zinfandel e Rhône ottenuti da uve selezionate.
L'arte della vinificazione
VINIFICAZIONE IN PICCOLI LOTTI RADICATA NELLA TRADIZIONE
Alla Dunning Estate, la vinificazione è un'arte intenzionale e pratica. Ogni lotto viene fermentato separatamente in piccoli contenitori aperti, consentendo una cura maniacale dei dettagli in ogni fase. I vini rossi vengono delicatamente follati a mano per esaltarne la struttura e preservarne i delicati aromi, catturando l'essenza del frutto senza sovraccaricarlo.
I vini bianchi vengono fermentati in botti di rovere francese per sviluppare consistenze stratificate e una sottile complessità. Adottiamo un approccio minimalista, utilizzando lieviti autoctoni quando possibile e conducendo attentamente ogni fermentazione a basse temperature per preservare carattere ed equilibrio.
L'invecchiamento avviene in botti di rovere francese accuratamente selezionate, con un sapiente mix di legni nuovi e neutri per esaltare la naturale profondità del vino. Ogni fase, dalla fermentazione all'assemblaggio, è guidata dall'esperienza e dal feeling, per vini concentrati, eleganti e inconfondibilmente Dunning.
Una vera azienda vinicola di famiglia
Alla Dunning Estate, la famiglia non è solo dietro le quinte, ma al centro di tutto ciò che facciamo. Bob e Jo-Ann Dunning sono spesso presenti nella sala degustazione, a versare i vini e ad accogliere gli ospiti.
Il figlio Garrett gestisce il wine club e si sta impegnando sempre di più nell'azienda di famiglia. Troverete anche la famiglia allargata che dà una mano durante gli eventi o nella sala degustazione.

Grenache is one of the most widely planted grapes in the world. It ripens late, so it needs hot, dry conditions such as those found in Spain, where the grape originated. Here in Paso Robles we have a slightly cooler climate. So it is usually one of the last varietals to be harvested, but it‘s certainly worth the wait!Button
